Fish Chowder - It's what's for dinner

Delicious and hearty, this creamy stew is great on cool nights!

  • 1 package Bear Creek Potato Soup Mix*
  • 1 pound of cubed white fish (tilapia, flounder, cod or other white fish.. in any combination)
  • 6 oz diced bacon
  • 1/2 stick butter
  • 8 cups water
  • 2 cups milk
  • 1 jar clam juice
  • Garlic powder, dried or fresh parsley and fresh ground pepper

  1. Brown the bacon in a large pot, do not drain. (optional, you can reserve some of the bacon to go on top of the soup as garnish)
  2. Toss in the fish. Add butter, 8 cups of water, 2 cups milk and the clam juice.
  3. Sprinkle in some garlic powder, parsley and pepper.
  4. Bring to boil, simmer for 5 minutes
  5. Stir in the soup mix, bring to boil then simmer for 15 minutes.

I like to serve it with optional crackers and cheese. yummy and super easy.  OH or better yet.. with a warm crusty bread.

* If you don't want to use a packaged soup (soooo much faster) then here's a great recipe for making potato soup from scratch.
