Delicious and hearty, this creamy stew is great on cool nights!
- 1 package Bear Creek Potato Soup Mix*
- 1 pound of cubed white fish (tilapia, flounder, cod or other white fish.. in any combination)
- 6 oz diced bacon
- 1/2 stick butter
- 8 cups water
- 2 cups milk
- 1 jar clam juice
- Garlic powder, dried or fresh parsley and fresh ground pepper
- Brown the bacon in a large pot, do not drain. (optional, you can reserve some of the bacon to go on top of the soup as garnish)
- Toss in the fish. Add butter, 8 cups of water, 2 cups milk and the clam juice.
- Sprinkle in some garlic powder, parsley and pepper.
- Bring to boil, simmer for 5 minutes
- Stir in the soup mix, bring to boil then simmer for 15 minutes.
I like to serve it with optional crackers and cheese. yummy and super easy. OH or better yet.. with a warm crusty bread.
